Hush Puppies

Many Southerners claim that these deep-fried puffs of cornbread were once used to quiet barking dogs at a gathering.  I find it hard to believe that anyone in his right mind would throw something this good to the dogs; I  have learned that muzzles, which can be purchased at any pet store, work extremely well when I’m trying to keep my miniature dachshunds quiet.  I want to save as many hush puppies as possible for us humans to eat! 

 

 

 

1          egg, slightly beaten

1          cup milk

2          tablespoons minced green onion tops

1/4      cup minced onions

1 1/4   cups white cornmeal

3/4      cup flour

3/4      teaspoon baking powder

1/4      teaspoon baking soda

1          teaspoon salt

           

            oil for deep frying

           

 

     Combine egg, milk, and onions.  In a separate bowl, combine cornmeal, flour, baking powder, baking soda, and salt.  Stir in the egg mixture.

     Heat the oil to 375°.  Drop the batter by 1 1/2 tablespoonfuls into the hot oil.  Cook for 3 minutes or until golden brown.  Drain on paper towels.  Serve warm.
