Tasso
Biscuits
Wonderful, light biscuits
with the spiciness of tasso. These go
well with salads or are good for breakfast piping hot with lots of butter.
12 Biscuits

2 cups flour
1 tablespoon
baking powder
1 teaspoon dry
mustard
1/2 teaspoon baking
soda
2 teaspoons
sugar
1/2 teaspoon salt
1/3 cup tasso,
finely minced or ground
3 tablespoons
green onions, finely chopped
3 tablespoons
butter
3 tablespoons
shortening, or lard
3/4 cup buttermilk
2 teaspoons
heavy cream
Mix the flour, baking
powder, dry mustard, baking soda, sugar, and salt. Stir in the tasso and onions.
Cut in the butter and shortening until well mixed. Add the buttermilk and mix to form a soft
dough. Roll out on a floured board to
3/4" thick and cut with a 2" cutter.
Place on a parchment-lined baking sheet and brush with a little heavy
cream.
Bake at 400° for about
20 minutes or until browned. Serve
immediately.
