Beef
in Oyster Sauce
June Lee's Famous Chinese Banquet
4 Servings

1 pound top
sirloin steaks, (flank steak can be used, but it isn't as tender)
1/4 cup oyster
sauce
1 clove
garlic, finely minced
2 slices
ginger, finely minced
1 tablespoon
soy sauce
1/4 cup sherry,
or white wine
1 tablespoon
cornstarch
1/4 cup water
2 tablespoons
sugar
2 tablespoons
peanut oil
1 teaspoon
sesame oil
2 sliced
green onions including tops
Slice the beef in
thin, bite-sized pieces across the grain.
Mix the oyster sauce, garlic, ginger, soy sauce, sherry, cornstarch,
water, and sugar. Pour over the beef
and marinate for 15-30 minutes.
Heat the peanut oil in
a wok. Add the beef and stir fry
rapidly for 5 minutes or just until beef is cooked through; don't
overcook. Sprinkle a few drops of water
over if the mixture appears to be burning or sticking. Sprinkle sesame oil over the top and garnish
with green onions.
