Fortune Cookies

I have been making these for many years.  Sometimes I make them very big with special messages inside; they are always a hit.  If you like, you can drizzle them with both dark and white chocolate or dip one side in chocolate.  They are very fragile, and taste wonderful.

 

16  Cookies

 

1/2       cup flour

1           tablespoon cornstarch

1/4       cup sugar

1/4       cup vegetable oil

2          egg whites

1           tablespoon orange flower water

1/2       teaspoon orange zest

           

16         fortunes, typed on 1/2 by 3-inch strips of paper

           

1/2       cup chopped white chocolate

                        Paste food coloring

       

 

     In mixer bowl stir together flour, cornstarch, and sugar to combine thoroughly.  Preheat oven to 325°.  To flour mixture add oil and egg whites; beat at high speed until smooth.  Mix in orange flour water and orange rind.

     Make just 2 or 3 cookies at a time dropping batter by level tablespoons placed about 3 inches apart, onto a well-greased or parchment lined baking sheet.  Use a small spatula or the back of a spoon to spread each portion of batter evenly to a 4-inch diameter circle.

     Bake until cookies are a light golden brown (8 to 10 minutes).

     Using a wide, flexible spatula, immediately remove 1 hot cookie at a time from baking sheet.  Holding cookie flat with smooth side (which was against the baking sheet) down, place fortune in center.  Fold cookie in half to make half-moon shape with curved (open) side facing upward.  Draw center of folded cookie (open edges up) across a thin-edged bowl of pan to crease cookie in half again.

     To preserve typical fortune-cookie shape, place each folded cookie pointed ends down, in cup of muffin pan until cookies are completely cooled and feel firm to the touch.

     Repeat with remaining batter.
