Crockpot Berry Cobbler
This takes only a few minutes prep, and the
results are fabulous. If you're in a real
hurry, substitute 2 -3 cans of your favorite pie filling for the berry filling.
This is actually good enough for company!

3/4 cup sugar
2 tablespoons flour
pinch salt
4 tablespoons butter, cut up
1 tablespoon orange zest
2 pounds mixed berries, or 2 16 ounce packages
frozen mixed berries (without sugar)
(blueberries, raspberries, blackberries)
Crust
1 cup flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
2 eggs
2 tablespoons milk
2 tablespoons vegetable oil
In a large
microwaveable bowl, mix the sugar, flour, and salt; stir in the butter and
orange zest. Add the blackberries and
toss to coat. Microwave on high 5
minutes; stir well and microwave an additional 5 minutes until the blackberries
are partially cooked and the juices are thickened slightly; set aside while
preparing crust.
Crust: Mix all crust ingredients until smooth. Spread evenly in the bottom of a well-greased 5 quart crock pot. Pour the berry filling on top. Cover and cook on high for 2 to 2 1/2 hours or until a toothpick inserted into batter comes out clean. Turn cooker off, uncover, and let stand for 30 minutes before serving. Serve with sweetened whipped cream or ice cream.
